A good while back I remember CoinPayments didn’t require KYC, I’m not sure if they’ve implemented it now due to regulations. You can also set up a sellix shop, it’s quick & easy and doesn’t require any KYC.

Is Coinpayments available in all countries?
 
In all honesty I don't really understand crypto gateways or the need for them, why not just put your wallet with a qr code? verify it with pgp and that's that. If you were making stupid money maybe a crypto gateway would be the way to go but 9/10 stores don't need it unless your hung up over every penny you make.

Truth is most merchants still have no idea how to use crypto

They're still stuck in the legacy payments mentality

All gateways will take kyc. Thoe which will not will not be safe to use.

What do you mean by pgp?
 
I think it is easier for you to implement a script to accept payments to your wallet, when after confirmation the client will receive what you offer on your site. All the more I understand you do not plan to accept fiat payments
