Hello

I have published a brand new website. I am now creating new pages. I also have an old website in a similar niche already getting traffic. I will soon 301 redirect the old domain to the new one. If there are identical landing pages on both the new and old domain, should i simply copy and paste the old website LP content onto the new website LP content, followed by the 301 redirect? Or better to write fresh content on the new LP and then redirect.

Yes, copy and paste the content and then apply the redirect.

It is beneficial if all redirected pages on old domain are indexed before redirect.

When you're sure the new content is ready, you can set up a 301 from the old URL to the new one. This can be done in the server configuration (for example, in your .hatches file for Apache servers) or through your content management system (CMS).

All of the old domain pages are indexed and ranking for a while now.

So I will just copy and paste content from the old domain onto the new domain, followed by an immediate redirect ?

It is generally not recommended to copy and paste the old website LP content onto the new website LP content.
