Based on what I've read, that if you start taking low paying jobs on upwork, then you set yourself up for low paying jobs in the future, is this true?

So, I shouldn't try to undercut everyone?

You should start with low paying jobs to gain more reviews and trust if you start with 0 recommendation no one will hire you with a high paying job

Yes. That might be an issue.
But the other side of the coin is that if you dont take those low paying jobs you wont have a work history for the higher paying job.
Here is what my suggestion would be,
Take a low paying job but ask them to report it as a high paying job. For example if the job is to write an Article and they are paying $5.00 for 500 words. Tell them you will do 2000 words for $5.00.

The client knows he is paying you very low, but everyone else they see the job as being $5.00 for 500 words.

Think of it as a marketing gimmick.
