Confused with Domain Redirection

So heres the scenario what I am facing:

Redirect Old domain to new domain's specific landing page


Old domain is EMD and in new domain the most relevant page is a landing page not the root domain.

While other pages of Old domain redirects to its relevant new pages on New Domain.

The Issue i am facing is when i want to change the URL Address in GSC. The error showing for "Change of Address" is I should redirect the home page of old domain to the home page of new domain.

My question is can I skip this step. According to Google I have to change the URL Address. As they mention it in a google support page.

Similar help needed for my domain? Should I go forward with submitting the sitemap? Is it possible or risky in the future?

If you are doing shady stuff, then don't, if not, then use the change of address (Fast one).

GSC only allows redirecting only root domain to root domain and change of address is not possible. I need to redirect the most relevant pages of the old domain to my landing page which is not possible in GSC. Should I do it manually as I have seen others have done it too but what the risks involved?
