I'm a newbie on Pinterest but I have experience in SEO, how can I analyse the competition, for example I want to check the most saved pins for a keyword or check the stats of pins / user boards :) I think they have changed something in the last months, because I think I used to see numbers without external tools.

You could also make this into a bot which checks the most searched pins.
 
We can't see exact saves, but analyze competitors by searching keywords, looking at popular boards, checking engagement, and reading pin descriptions. These give great insights.
