I am script that I modified pretty extensively and have been doing some testing to see if I can easily get organic traffic to one of my websites.

Now I would like to expand on it by creating atleast 50 to 100 niche sites but I really don't want to spend $500+ on domain name registration.

Should I consider sub domains, .info domains, or just bite the bullet and stick with the .com's from a SEO standpoint?

If you are going really serious with this, buy .coms , if not, then go with subdomains.

Buying separate .com's is the best option but can be expensive.
Sub domains are all treated as separate domains with no relation to the parent address so as long as the keywords are in the domain (for seo) these would be fine.
Depends on who is going to be using/visiting the address.
Click through/serps or people actually needing to type the address.

It's all down to your budget and personal preference IMO.
