Clone Dating website?

Unless the site has some really unique functionality, I'd probably avoid building everything from scratch. There are quite a few mature dating scripts and platforms that already handle user profiles, messaging, matching, and payments, so you can spend more time customizing the design and user experience for your target audience instead of reinventing the basics. I'd only go fully custom if you expect features that existing solutions can't support. Are you mainly trying to replicate the functionality, or is it the branding and user experience that you like?
