I was wondering if I should create separate blogs for each product I am trying to sell or if I could do a multi-product review site kind of thing. Now I know that either could work, but which one do you guys think would work best with clickbank conversions?

For me right now what's working is making 1 site per niche and writing articles in the niche and having links to products located within the articles. If you're completely new, check out affilo blueprint. I'm basically doing that and it's paying off fairly well

One product per site for me. Or if the product is in the same niche, that would still work but i have good results with one product per site :)

If you are going to write real reviews, then start a niche specific blog with multiple product reviews in that niche.
If you are going to push the surfer with sales copy, bonus etc, then concentrate on one product per blog.
