Clickbank niches?

I just read an journey saying he found a new niche which has no competition, and started to work on it.

Is the niche he found a "Clickbank product" or he just found a niche and added Clickbank product to it? Anyways, how do you find these niches? I'd like to start with CB.

Most of the times the CB product is a solution to a problem in the specific niche. You should choose a niche your feel good about and then find CB products related to it and promote them. Just choose and go for it!
