Cleaning up Google Search Console

I have just inherited an ecommerce site which someone has attempted (poorly) at indexing.

Having a look at google search console there are 10,000s of product pages which excessively long (containg 4-5 categories in url and every variation of category combos).

I have since simplified the url stucture and only want to index one url per product.

My questions is, what is the best stratergy for cleaning up the search console?
Am I best to remove all indexing and start fresh and if that is the case what is the best way to go about this?

Haven't come across this issue before so any advice would be greatly appreciated.

I would start fresh. Tbh I've no idea how to do this. Never needed to do it.

To clean up your Google Search Console, start by removing duplicate pages with the same content as others. Use canonical tags to identify the preferred version of each page. Delete unnecessary pages like old product pages or those that have been removed from your site. Update internal links to reflect simplified URL structures. Doing this may avoid the need to remove all indexing and start fresh. If starting fresh is still desired, use the "Remove URLs" tool in Google Search Console to remove all existing pages, then submit a new sitemap to Google to index new ones.
