I HAVE TWO QUESTIONS FOR YOU CLICKBANK MASTERS HERE
How to chose best offer on clickbank?
How much traffic is urgent to see just one sale?

It's good to choose a product that has a reasonable amount of gravity(Not to high not to low).I would recommend you asking the vendor if it's possible for you to try to product out.
In my experience, the sales depend on the type of traffic you are using (PPC,Organic,Social Media,etc...) Some sources might gain you sales quicker than others, depending on how it's set up.

there's no product with which i haven't made sales.. gravity doesn't matter, all that matters is sales page and how you promote the product, you just should understand your customers..

I agree with choose something between high and low gravity, what i usually do is check some products and do google searches on these to see what i am up against

Landing page is so important

if you look at the high gravity sellers, you will get ideas of what a good landing page looks like.

The audience will determine the product you will choose to promote to them. if you are targeting audience/traffic from the weight loss niche then you can promote a weight loss product to them.

And also don't be afraid to test out different products for certain traffic... you will find out that certain products convert better than others.

I would go the other route and base the product you promote on the niche you are in, and what ever opportunity you have then its a lot easier to narrow it down within that niche based on the other factors other people mentioned.
