Is it best to have different channels under the same Google account or is it better to spread them with each their own? What is better also for adsense as i already have a monitized channel can i link the others to the same adsense with different google accounts? Thanks alot.

one channel per email is safe create as a brand channel, yes u can link the existing adsense
