Lets say you register with your real info when buying domain names, then you change the whois and account information. If the company gets a request for your information from a lawyer, would they give out the info you have on your account at the time or they check and see the old real information and give that out?

They may give your old whois. The best way to avoid it is to transfer the domain to another registrar after changing your whois at current one 
But with tools like domaintools, one can get all the historical whois by paying a few bucks.

Yes it is possible to get all the whois history as domaintools (and I'm sure there must be others too) that index the whois information whenever updated.

Try to register a new domain name, if you do tricky things. Just to avoid big problems in the future
Don't have any domains right now, trying to decide if I should use real info then change whois right after or keep trying with prepaid cards and deal with running into verification problems.
