    "This was old title"
    "This was old description"
They are already indexed on Google.

Then I change them to :
    "This is new title"
    "This is new description"

Which one will be a new Index? The New one or the Old?
How can I keep the Old remains indexed?

your new title will be get crawled. It will be showed.

If you want the keep the old title means, you have to change it again.

New title should show up. Sometimes google takes different meta information - part of sentence from your article if it considers it more valuable but that's rare.

But what if the new one is set to be not index? Will Google still index the Old?

I guess there is no way you can set a title or description to be no index.

If you are on wordpress and you use YOAST, you can have two different titles for your articles, one will be the one showing on Google and the other one will only show on your Blog, under the Yoast settings in your Post, just Put the Old title and description there and in the main title column in wp editor, put your New tittle.

I hope that answers your question
