Hi, a domain was indexed in search console and was good some traffic. Now I have stopped this hosting a couple weeks ago and it was "site cannot be reached" for some weeks.

Now I am changing hosting, so would anything in the indexing part be affected? Would I need to re-do anything?

Since your site wasn't available for a few weeks, I suspect google de-indexed some of the pages.
Once your site is online again... google will re-index it or you could speed up the process by requesting indexing in GSC.
Whenever I move hosting, I don't really do anything.

I just re-checked by going to incognito and put site:domain.com and it's showing pages including about us and contact us pages lol

You'll have to wait at least a month before it makes a comeback. I had some sites offline last year for a couple of weeks, (didn't have a domain alert on them), and google deindexed them, but when I got them back working again it took at the most 6 weeks before they recovered to nearly as good, but have taken probably another 6 months to fully recover and improve past the previous highs.

Probably some of the pages would have de-indexed, choose the hosting partner, then manually submit those links for indexing.

You stopped the hosting and hadn't got the site migrated straight away, so it was unhosted for weeks?

I just migrate it over and don't really worry about much to it, as prior to mitigation, I already tested the new host and make sure everything is good to go before switching it over.

In your case, just get it back up, there would be some traffic & rank drops for sure as its been down for weeks.
However, salvage what you can by getting it back up.

I had my site go down, and google deindexed my top-performing pages. It took a week but everything bounced back.
