Hello I'm planing to change my channel content and they are some videos that get good views must I keep them or make them private, and what's the best thing for the old content make it private or delete it

Why not get another account instead of changing the niche of the account?

Yeah, I second that. Get a second channel you can post the other niche on since that's what Youtubers normally do anyway with content that doesn't necessarily fit the format of their main channel. Also, unless it affects you negatively, just keep the popular content available and private the less performing ones.

Are the old videos getting views ? If they are not getting views , you might consider deleting those videos.

Keep them. I have seen many such channels who switched niche but still keep old videos for revenue. Never end your current sources of income for new avenues.
