I want to learn about VPS and Linux. Which one should I start to learn and get familiar with CentOS or Ubuntu?

Gonna be personal preference. Ubuntu probably is best imo

Pick ubuntu, tons of information on Google, it will be easy to get started as more in depth information is available and once you mastered it, move to others like a disease.

I would suggest CentOS. They are equally in terms of learning curve, but Centos being Red Hat member is easy to scale.
Keep in mind that, no matter which one you choose it is still linux. And, the skills you learn from one will translate to another.

I prefer Ubuntu because of the deb packaging system. Most of the people chose between centos or ubuntu just because of their background (for example, if you started working as a sysop and the company servers where in centos, you might stick to centos forever, same for debian/ubuntu).

Both actually. Why would you miss out on one vs the other? Both of the flavours of Linux have tons of tutorials for getting started and also for becoming an advanced user. I would say, learn both side-by-side. See which one you like more, and then pick one.
