I have two parts to my setup. I recently started to use sendgrid. Their free account has free API for inbound emails. Apparently there no limit to the number of inbounds. And you can add as many domains as you want, all you need to do is add a MX record to your dns. Plus if you have a edu email they will give you a free upgrade to send something like 10k emails a month forever.
I then combine that with my free azure account to save all emails to a sql data base. Azure gives you 250gb of sql database. But once I verify an email I just deleted so I probably will never reach the limit.
