Can you create unlimited proxies with docker containers and squid on a single server?

I have just a year of programming experience and was just learning about docker yesterday and it seems every container has a unique IP address. Also, you can create and destroy containers at will very quickly.

Can you take advantage of this feature to create multiple proxies on one server? I know I'm missing something because this feels too good to be true.
