Can Updating Php Version Break A Wordpress Site ?

I'm hosting my websites with hostinger , they have a different hosting dashboard and cpanel .
i'm trying to update the version of php on one of the sites and they tell me tat it's impossible , when i contacted the support they have told me that they can only update the wordpress version on all of the websites .
i have clients websites there and i want to know if updating the php versions could cause aproblem or not

On short: Yes, it may affect the other sites.

For cPanel (your hosting provider, as you specified, may have other features), you can preselect the PHP version for each domain and subdomain.

1. Login to cPanel.
2. Click the MultiPHP Manager link in the Software section of cPanel.
3. Check the box for the site or sites you wish to update.
4. Select the desired PHP Version from the drop-down menu.
5. Click the Apply button.

If your hosting provider don't provide the feature above, and your sites will be affected, I suggest you to move on another hosting provider.

Yes, updating from PHP 7.4 to PHP 8.0 may cause problems.
I suggest using a test system (copy of your main system) to test upgrading Wordpress before upgrading your main sites.
