what is the best for structure for SEO weight out of the 3 links above?

not the 1st one. (repetition of apple not required)

Either the 2nd or 3rd.

2nd one would probably be best if you have a larger site with a section of fruit (easier to organize)

3rd one is probably better if it is a mini site

IMO all of them are relevant to your target keyword according to the overrated onpage SEO hype. Relevant anchored 'apple' keyword links will push an 'orange' url to the top of serps. Adobe reader download page ranks top for a keyword that doesn't exist on the download page itself or the url part. Lets build links and stop fretting over this.

2nd one is the best.

However if you are using wordpress go for the third option, because your post URL will be independent of the category. Meaning you can change the category anytime you want and add the post to additional categories etc without breaking the existing URL.
