Hello, I created website 6 years ago and I did not know something about SEO and I created 200-300 worst article.

At this moment I have 2000 visitors per day, but only from new articles which I created in last 3 years.

Can I remove non performing articles from time to time?

If article is so bad, with 200 words, with no SEO configuration, with 0 traffic - Should I remove It from website ?

How can I start this process ?

As an option, you can also make 301 redirects of old articles to new relevant articles that have traffic.

I would say don't remove them try to add more content to them or change a few things like adding more keywords and all.
Some of my site's articles work well after months of getting no/less traffic so I always keep all the content there only.

Well i dont see the point removing them because i dont think it affects you in terms of seo and who knows maybe later on they will give you traffic
Or you can try to rewrite them if you want

You can Rewrite and add some vital content to your article

Thank you guys! I will rewrite It

After rewriting these "bad" articles, try to check their links and see if you can work on them too. Since your new articles are better, you might be able to internally link some of them towards your old ones, if they are relevant to each other.

Better to expand the current articles - unless it's cannibalizing your other better performing articles.

The old articles do not get traffic, only the new articles get traffic right now OP stated.
