Yes, niche is very useful to attract audience. But must get focused on certain target audience, a topic that is informative.
Can I make a blog on multiple topics/niches

The internal linking part is important. Back when I created my first business website, it covered so many topics that I couldn't develop a good internal linking strategy since many of the pages were unrelated.

if you are blogging for fun, not for gaining money, you can write about anything, it's your blog after all,
But, if you want to blog for money and income, i think single niche is better for SEO and targeted Traffic.

I think even people blogging for fun want some readers to view their content, otherwise they would just write in an online dairy.

OP was talking about creating one blog that covers multiple niches, not a PBN, so there's no need to worry about footprints (unless the OP decides to outsource the link building).
