Bought competitor's old domain - need advice!

I was just able to snag a competitor's old (10 years old, never dropped, EMD) domain he let drop yesterday when he rebranded a while back.

Here's the thing...he's ******** linking out to the old domain from his new domain, which has been up for several years and has decent placement in the serps. I guess his webdev just copied all the html and didn't think to change these links. Anyway, that's why I bought it.

Should I
  1. 301 the old domain to my main site?
  2. Build a simple, 3 page site on the old domain and run it as another wedding photography biz?
  3. Build a simple, 3 page site about sports memorabilia and link out to my main site?
  4. Do something else?
The business is in a fairly large city, but I moved far, far away months ago, and so I have no way to get a Google postcard to verify it as a local business for GMB purposes, so wondering how to work this out. I suppose I could rent a virtual office space for $50/mo to make it work, but I don't know if it's worth it since the old domain has no rank to speak of and might be really difficult to get into the 3 pack. Not only that, but I have several similar businesses in different cities and it is challenging to stay on top of multiple assets like these. That's why I'm considering the 301, but I paid a fair bit of dosh for the domain, and don't want to waste it either.

What do you think, bros?
