what if you take articles published on science websites and rewrite the text nicely, add some urban phrases to make it interesting, and make a video out of it? Can that work?

science channels do so well on youtube, I mean a channel like this one: https://www.youtube.com/c/Exurb1a

Probably YES mate.
For any niche, content is more or less same but the way people perceive the things will be different. So if you present the same data/info by adding your perspective to the audience, you will have better chances. But if there is NO value addition in the content, it wont work.

With what software the author of the channel makes "live" pictures, who knows?
