What do you guys do when some of the sites you're competing against are blatantly using your content...not even spinning the content,but word-for-word?

I've never used this, but I've seen Google showing this notice in results before. Maybe you could try reporting them:

How you prove that you're the owner of the content... I don't know. Maybe Google can see what was indexed first.
But I'm not sure if Google actually goes after people for this.

Unless you're a huge brand spending or spend a lot of money on Adwords, it's unlikely that Google will do anything about it. I contacted Google three times about stolen content and they never even replied.

So what then? Take down mine to avoid dupe penalty?

If yours gets indexed first you're not supposed to get the dupe penalty but the other guy is. However it doesn't always work out that way. You could always wait and see. And in future make sure your content gets indexed as soon as its up.
