I am creating my first Amazon Affiliate site. I am wondering if I should make multiple website covering different niches or would it be better to make 1 website that covers multiple sub categories of a niche?

Don't try to be a little amazon as they check manually after three qualifying sales, they could terminate your agreement

one site with different subs is much more better for sure.

Is it better to get products from individual affiliates or stick with google affiliate?

One website with few related reviews, categories, should be very fine for sure. Do not go to broad anyway, it will not make you anything good in the long run, that's for sure. Write articles no less than 1000 words per such and do not do anything anymore.
