If you´re unfamiliar with that combo, I highly recommend you ti check the videos from The Admin Bar YT channel.
The guy is heavily focused on GP+GB and has some of the best in-depth tutorials you will ever find on the internet.

I personally like Generate Press since its lightweight compared to other themes.
While it is pretty barebone on it's own, with some css knowledge, you can build something super amazing without bloating your site with 293010321 plugins.
Although, at the same time, without the time, patience and dedication to fine tune, test and experiment when customizing, it can still end up running like crap.

Not at all, out of the box is "bare minimum" and runs fast but it's lacking visually everything.
It is more you start customizing it, it may end up running like crap if you dont optimize it like everything else.
