I've heard good things about WPMU DEV's Chat plugin and also the Live Chat plugin from CodeCanyon. Both cost $ but not too costly at under 20.

1. You get chat transcripts after each chat.
2. Able to talk to multiple people at a time
3. very easy to setup
4. And this for me is a big factor, I can chat with my clients online using my iphone
