What do you recommend?

How often do they update?

Anything to watch out for that you've been caught out with in the past?

There are quite a few rank trackers, but personally I use the rank tracker feature from Ahrefs.
 
How often does it update the ranks?

I was more looking for an independent rank tracker?

It depends on the plan

Previously I've used AWR (the best), Accuranker (semi-ok) and Wincher (very bad)
 
SERPRobot is the cheapst, used to be Serplab.co.uk
 
Cheapest usually ain't that reliable, keep that in mind.
 
Serplab here, very cheap and works well. Been using it for over a year
 
Try spyserp, update on your own schedule, buy credits as you need them
