Any product can have a high conversion rate. Though, you are missing on key stats that will make you think on other stuff rather than just conversion rate.
Your focus should be on stats like EPC and offer payout.
Say you are selling a product at $1,000,000 usd and you got 2,000 clicks but only 1 conversion. Even though your conversion rate is ultra low ( 0.05% conversion rate), your EPC (earnings per click) would be $500!! so for each click you would be making around $500 on average!
Also, it's not all about the product, or how well it converts, but also, HOW YOU SELL IT!
How you sell something will turn a losing product into the next fortune maker!

well, usually free products have high conversion rate 
but seriously,
conversion rate is only one piece of the puzzle... EPC (assuming calculated right and not faked) is the big picture, together with CPC.
EPC(conversion rate is in here) minus CPC (your cost) = your profit (per click)
as an affiliate, you cant do much to change the EPC, so all you need to do is work on lowering your CPC...
product A as an EPC of 3$ but your marketing costs are 1$ CPC
product B as an EPC of 10$ but your marketing costs are 9$ CPC
while product B has much higher EPC, it will be much smarter to promote product A.
so basically the question is, which products are easier and cheaper for you to promote?
then check their EPC of and choose what to promote based on that.

we mean (at least i do) that conversion rate alone doesnt mean much...

Weight loss niche is something to be considered. Though not sure if related products pay well on commissions

if you dont understand this then maybe you need to go over EPC AND CPC
estemated per click = EPC
click per cost = CPC
product A as an EPC of 3$ but your marketing costs are 1$ CPC
