Just a quick question, is there any reason why you cant just go and edit a wikipedia page that is relevant to your niche and post a link to your site in the references section?

You can, but it is not as easy as you think. They have quite a strict moderating system, which makes links placement quite tough.

Moderators will leave your link on wikipedia only if it's very important for community. Otherwise it will be removed.
By the way all wiki links are nofollow, so no pagerank will pass. But they can bring some traffic.

Wikipedia generate very relevant traffic to the website. If you spam Wiki with links,it will hurt you badly. Be organic and add links in a smart manner.
