How can I check my sites current backlinks and anchor variations? Sites like majestic and ahrefs only show a few backlinks from a few blog comments I made. They dont show any of my PBN or 2.0 links.

It takes time till majestic, moz found your backlinks. Use ahrefs, i found it the fastest.

You should take a ahrefs account for 1 month using SEOBOOK as a code

You can try SEO SpyGlass as well. They have a free version that works very well, but with the free version some features are disabled. SpyGlass probably isn't up to the standard of Majestic or Ahref, but it is still worth a try. P.S. You will need some proxies.

Majestic, Open Site Explorer and ahrefs.com charge a monthly fee. I used ahrefs and strongly recommend them to you. You can also use Market Samurai,my friend once used it.it will easily find backlinks of your sites,bit slow though.

You can use Ahrefs it's one of the best link checkers.

Ahrefs is the best in my opinion too, however, there are many things they don't detect for a long time, it seems. I have seen it take 2+ months to detect links coming from wordpress.com!
