First of all, your ranking is not that great. Build quality links to existing content then write more high quality content and properly interlink them with the rest of your existing content, then build more quality links to new content.
Now, carefully optimize title and meta description to capture the attention and interest of more users. Also, consider schema (structured data)
Normal CTR rate (depends on many factors) 1% to 6%
That being said, carefully attempt to raise that CTR by 1% - 3%

Thank you for the advice and information. My website is rather limited on content though, there's not much to write about. It's not a typical Amazon Affiliate or Informative/Blog type website. But I will focus on the link building and see if I can do some better interlinking.

I seem to have a problem with Google not updating my Meta Description. I built the website with Wix and changed it through the SEO tab, and I can see on the source code that it has been updated, yet the Google search results keeps showing a colon ( : ) rather than a " | " or " - "
I've tried changing to both, and waited weeks inbetween for it to update, but it never did.

Yeah. Sadly, some niches are so limited indeed. Google is still so stupid in terms of updating their index. I ones had a deleted page that remained in the index for like 8 month. Tested again with other pages and the result were more or less the same, so yeah, Google take time to propagate and properly update its index. Remember to check and to be established in bing and yandex as well, never underestimate their size.
Why wix mate? why sacrifice control in favor of better looking interface? Most of us use wordpress. It gives a ton in comparison. Try it with your next project. Good luck

Quite certain it's either due to low quality content or your good content pages can't be crawled (I had very similar stats to you a couple of years ago when the old webmaster bastard we had blocked crawlers from accessing main pages until I figured it out and stopped the blocking shit).
Are you preventing any crawlers via robots or htaccess from accessing your pages/content?
Also how long have you had the site for?
What are the mobile stats like?

It was the first site I made myself and thought it was the best (due to simplicity). I have now used Wordpress for a bunch of testing/experimenting setting up PBN sites and realised how much better it is. But I don't want to go through all the effort to recreate the site on Wordpress. But you're right, I won't be using Wix for any site ever again.

But surely the people would need to click on the site in order to "read" the low quality content? A high bounce rate would make sense to show that it's poor quality content. I guess my rankings are a little too low for the site to actually be clicked on.

To answer how long; I think around 6 months now.
Mobile stats; Not sure, but I am actually only targeting people on PC due to the CPA offer(s).

I found the GSC average position graph to be pretty meaningless. You might as well turn it off and disregard it completely. GSC calcs it on a ton of kws that are pretty much useless for your business, so it makes sense to only track average position for the keywords that are actually relevant to your business.

Apparently this setting was disabled by default.. And for some reason it's in a different section to the standard "SEO" settings.
I've enabled Schema but I'm not so sure if that's really going to make any difference. I see my posts in the sitemap.xml. So I've resubmitted my sitemap. Do you think this may fix it?

Nope, Schema won't help in this case because Schema is just a bonus feature for marking up little site information such as ratings or pics so it can get a shot at becoming a "Rich Snippet" search result (if pages are being indexed). For example, a company logo, website review ratings (those stars on Search Results) and shit like that.
The issue you're having is pages aren't actually being crawled or accessed by bots. As you confirmed, main blog pages aren't being indexed and crawled and that's a sure sign that bots and crawlers aren't able to access those pages due to some sort of block (either Robots.txt or .htaccess).
Even if those pages are of shit quality, and don't have any content, some of them should still be indexed.
Starting off with the basics, what's your Robots.txt looking like? Any "Disallow" or "Noindex" things going on in there?
How about your "Coverage" page in GSC? What are the errors in there at the moment if you don't mind me asking?

For example;
Yahoo search shows my site and only 1 article.
Bing search shows my site and only 1 article (same article Yahoo shows).
DuckDuckGo (via Brave browser) shows my site and all 4 articles.
I'm very confused :/

I'm now certain it's because of your robots.txt disallowing the indexing.
Remove all those disallows in your robots.txt and I guarantee you'll get pages indexed this week.
A lot of those disallows are really unnecessary like
Disallow: /favicon.ico
Keep us updated.

Wix doesn't allow you to alter the Robots.txt file. It's automatically generated. Any other ideas?

You'll need to move the site to another host.
Wix to Wordpress or something more flexible as you're not going to get past this hurdle without being able to allow crawlers to access your money pages
