Let's say I have 10x websites (high authority) that are willing to publish my guest posts
along with do-follow links.

Would it make sense to publish several guest posts on each of these 10x sites
other than publish only 1x guest post with 1x link and continue looking for more different sites?

100x Guest posts on 10x sites VS 100x guest posts spread across on 50x sites for example?
 
If you have to pay for them, it would not be worth it, unless they also drive long-term traffic.
 
I don't mind having multiple links from the same domain.
@BigBoogie gave you a great answer... in my opinion.
 
If their unique page links to your unique page then there is little loss of link juice.

If their or yours page is not unique, it works much less effectively.

In such case you will probably start to see diminishing returns after 3rd link.
 
Nope having unique link profile always gets organic traffic, rather look for different link profile from different source.

100x guest posts spread across on 50x sites will be better, if we are talking only about link weight.

Each additional link from the same domain will give very little extra weight.

It is not a good idea for the long term. The cost is also a major factor to consider.
 
Something else to consider, you lose one site you lose a big chunk of your links.
