Each country has its own regulations. Where do you come from?

First rule = If you earn, you have to pay tax..sooner or later
Second Rule = If your idea/business is unique or profitable, you need to registere your business/company so that if one of your employee steal your business/data you can sue them.
Third Rule = As long as you can avoid being registered, its best for you and your business.

This should be moved to the tax advice section.
You need to speak to a professional in your country to get the best advice. Find an accountant or an agency that specializes in business registration.
There are probably gonna be 3-4-5 types of different business registrations in your country, and picking the right one will save you money in the long run.
I wouldn't recommend registering before you are making avg wage or more. It's too hard and in most countries, they'll let you get away with this while you are just making peanuts.
When you are making considerable amounts of money (enough to live off of that company and more) you should go ahead and register with professional's advice in mind.

Moved to Business & Tax advice where you'll get relevant replies (hopefully).

When looking for a jurisdiction, these are some of the questions you need to ask:

(1) Where are you a tax resident, and what are the laws of that country?
(2) Where are your clients?
(3) How will your clients pay you?
(4) Do you want to optimize for taxes, or for smooth operations?
