Cooking question here...

Let's say i make my own potato chips in the oven (yam + olive oil), and then I burn them a bit to get a nice mixture of colors. Can I then put them in food dehydrator to take all the water out to store them for a week or so?

No, don't do that, they will turn to rubber since you already cooked them and potato has way too much sugar and starch...it would be a very bad deal.

Bake them in the oven to cook through and then a few seconds under the broiler to crisp and get that color you are looking for...not burned that way but caramelized on the surface.
 
I do Cooking on Some Special Days..I have done a lot Cooking in past as I worked in So Many fields even in a Hotel as a Cook for a Small time..So I like and Love Cooking..but Honestly not Cooked anything for last 3 Months..Was Very Busy..now Planning to make some on This Sunday..

So is there a way to dehydrate like I can do with fruits and vegetables and store them in Ziplock bags for one/two weeks?

Only way to get them to be like regular dry chips for storage is to deep/flash fry them.

I use Safflower oil, as it is one of the most heathly oils you can use. I only eat stuff like that once in a while though, however, when I do, I make my own at home.

Fry them up, lay them out on papertowels, season them while hot and put them up once they cool .If you put another paper towel in the bag with them, to take up any excess oil or moisture that comes out of them and change it periodically, ( once a week ), they will keep of 1-2 weeks in a dry cabinet with no problem.

Personally, I don't recommend keeping fresh stuff like that after about 8-10 days, but, it will make it if stored right. I use sealable containers instead of storage bags. Personal preference though in this case.
