Anonymous phone number and staying anonymous on the internet

Sorry if I posted in wrong place.

I'm making a movie streaming website and want to use paypal and/or possibly BTC (when I figure out how to use it) to receive potential payments or pay for services like premium VPN or website offshore hosting but most of the time I run into a problem where I need a phone number for authentication or for offshore host payment and I'm just wondering if its safe to buy a phone number on a traffic stand and use it as my number? Would it make it traceable to my phone if I'm using my phone for the number? I'm also wondering should I be using my phone at all if I want to stay anonymous with my website?

Also my IRL nickname is my username on doodstream, should I be worried about this?

The accounts I made so far have been changed to protonmail so I cant be traced trough email, but it worries me that they started off with my main email.

I know I might be worrying too much considering I'm new to this and my website probably wont have traffic for a few months but I just want to be very careful and cautious!

Why not use pre-made google voice account + proxy? Google voice accounts go for around $5 and you can receive all SMS verifications you need.
