Lets say my main keyword for the site was "Dog Training",

but my anchor text for some pages on my site would be:

Golden Retriever Dog Training
PitBull Dog Training
etc
etc

Would I still rank for "Dog Training"?

As long as your home page targets that phrase, "dog training" you should be fine those other keywords are related and have "dog training" in them

for best SERP's, your anchor text must be your primary keyword "Dog Training"

You can't just use "dog training" as your anchor text though, it's going to look like spam. When linking from your inner pages to your homeapge it's ok to use variations of your main keyword such as "pit bull dog training" but when linking inner pages together you should use the exact keyword that the page is targeting ie; "golden lab dog training"

the other thing is if the pages are relevant to the anchor text and the ancor text is relavant to the landing page then your onto a winner.
