Im about to get backlinks from some english websites, but my anchor text is not in english. Is this something that google cares about? Thanks

Yes you can. And I think it is no big difference for languages. Because the most backlinks have no pr differences in the same domain. And nearly most of them cannot have good rank on google. They can provide the same PR. Both numbers and quality is very important for backlinks. BTW can I make anchor text over here? It seems not. http://www.sinocooling.com
 
No Google doesn't care about that non-english anchor unless until the the content is relevant. Try to publish 1000+ words article.
 
If you get those links on quality/relevant domains and articles it's fine, but don't build more that way.
