Is it better to go with a lower competition niche or go for a top niche (coffee maker for example) if you found a good domain?

I think i got one but it seems saturated. Should i go for it or domain is not THAT importat for Amazon affiliate?

The domain does not matter almost at all for SEO, don't even consider using it as a factor to base your niche selection on.
Arguably, it's better to use a branded domain (eg enjoyacup.com or drinkwithmark.com) than a keyword domain (bestcoffeemachine.com). Leave the kws for the post titles/URLs and H1/H2.

Niche is very important. If you have high budget, then pick high competition niche (Coffee maker, Vaccum cleaner).

Lol definitely dont pick coffee makers
Not only ull have to compete with mega sites on the organic results there are also a ton of paid results there
