Is copying content from amazon affiliate sites and replacing the links with yours either illegal or against amazon terms? Should the page be able to rank anyway?

Yes, it's against Amazon terms but they wouldn't be able to (or care to) check this so that's not the main problem. The main problem you'll face will be from the site you copied content from.

They can file a DMCA complaint against you. Also, no, such type of duplicate content won't rank if you're copy/pasting as it is.

You should get it rewritten by a human and add in some extra information here and there for it to be able to have some potential.

Google hates duplicate content.
