I have a lot of domains and websites but I can't afford the extra for whois as well for most of them. Are there other ways I could hide the details of the contact like just changing the contact details in Godaddy to say Joe Blogs or whatever but still use all the other things like address etc? I don't want to later find all my domains have been deleted all something as it had the wrong name. Another idea is instead of using my full name I could just put my initials?

There is no other alternative for whois protection. You need to take care of the fee. Godaddy charges high for whois protection, for future domain buying i recommend you to use namecheap they give whois protection free of cost.
Don't ever try to fake your domain whois details unless you buy it for use and through. When a situation comes like you need to sell/flip your domain it will be a problem.

You are required to have your contact information on the whois database, however is up to you to comply with this.

On the other hand, buy your domain thru namecheap...they come with free privacy protection for the first year and after that you can buy a 5-pack for $2 each.

OK, I guess I better transfer them to namecheap in the future...

internetbs.net‎ has whois privacy included in the price, it's not expensive and is reliable

in namecheap use coupon 'wgspecial' for $1 privacy. this is after the first year where privacy is free. although at some other registrars, you get more expensive privacy but can get cheaper domains (e.g. godaddy coupons can get you .com for $3-$4 sometimes), so it kind of balances off.

just check what's available and also remember that renewal prices are sometimes different than initial registration prices.

I used a coupon which gave free whois while buying the domain, you can check if such coupons still in work
