Hey,
does anyone know how do people rank their websites on google for low competition product keywords but when I click on the link it redirects to AliExpress referral link. It seems that Google sees the original page but only the user gets redirected.

Cloaking, but your site will be penalized sooner or later. Its like churn and burn kind of thing. The main thing is to show bots your keyword stuffed site and redirect real users to the link.
 
According to my Knowledge ,making users to an Ali Express referral link, is an affiliate marketing .It involves promoting products or services through affiliate links, where the affiliate earns a commission for each sale made through their referral. If it's so then google will not Penalize the site .
