Aged domains

2. If you purchase a domain from go daddy auctions, will the 'created date' on the domain still maintain its old age, or does this reset?

3. The most important one i wanted to know was, what about web hosting? If the previous owner used one web host and you want to use another, will this still maintain age?

3. The previous owner's web hosting will not affect you - when an expired domain is available from GoDaddy, it is no longer hosted by the old owner, GoDaddy hosts it. When you buy it, you point the nameservers to your own hosting account. The age is unaffected.
