As long as you're targetting the same topics/niche, it should work,
You don't have to use the exact same content/HTML, it's easier to use when it's good/up-to-date so you're saving up for the content,
If you're content is targeting a different niche, then it's simply risky,
It could work in some cases, but it's basically spam, hit or miss

Very difficult to get an expired domain to work. If its in a different niche... even more difficult. Google is much better these days in realising the domain has changed hands / content and devalues / resets the links. I still have a few domains that work great. Others, are as dead as a dodo

Well, if you bought a website originally destined to teach german and transformed it into a fashion ecommerce, the results can take much longer to appear, since your previous niche is still recognized by Google and the previous topic authority built by this domain is still relevant. I don't understand why to buy an expired domain about X to totally change its niche to Y, it would be easier to buy a new domain if this was your intention

I think you don’t need to revert to the old content. Instead, focus on creating high quality, relevant content for your new niche. If the old content had valuable backlinks, consider using 301 redirects to preserve SEO value. Monitor your rankings and traffic before making any further changes.

If the new content isn't in the ballpark of what someone would expect clicking on a backlink, those backlinks may not do you much good

If you plan to changing content, make sure the shifts appear natural and relevant, with a logical transition for users.

No you have not violated anything. But drastic change in content might affect the site's SEO performance.
Perhaps wait for sometime and if the new content doesn't bring any improvement you might consider reverting old content. If it is relevant to your niche.

It is best to restore content from the old website, so that Google bot can re-index the entire content.
However, there is a possibility of content copyright issues with the previous owner.
