I'm looking at a niche now and the adsense CPC looks a bit like this:

Now, if I am not mistaken this is just an estimate made off the average of what others are paying. So these keywords could be a couple cents more PPC or a couple dollars less. I'm going to guess it will be the latter. So let's just take the $11 one for example. Being pessimistic, let's say that the actual PPC that we get on our site is $6.

Google takes what, 32% of that? So if we averaged $6 per click, and Big G took his 32% ($1.92) then we would be left with $4.08 per click.

Now, clicks are (seemingly) more easily attainable than product sales. So what do you BlackHatters think would be a better option? Taking an average of $4.08 per click on Adsense ads, or trying to sell an affiliate product for, let's say, $9 commission?

Why not both?

As you start getting traffic, do seo or get it out sourced, you will start earning clicks and sales as well. Also consider doing twitter, pinterest and facebook. Cause right now most of my traffic is coming from those while seo takes care of the search machines

Given the numbers you've presented in the in your last two sentences it's is highly unlikely that affiliate products with a $9 commission will perform better.
EDIT: Assuming both get equal clicks, affiliate links will have to get a bit less than a 50% conversion rate to match adsense.

I always go on Adsense and Sales, but first try Sales, you can always put sales instead if ADSENSE not make you enough money.

For medial and fashion niche always use Sales, and for insurance and car niche use Adsense.
