They look good to you, doesn't mean they look good to google as well. Add some more well researched and detailed articles. Don't just post the AI output as it is.

In my opinion, it is preferable to apply after posting frequently for 3–6 months. Also, make sure to posts over 50+ original articles in good sentences and paragraphs with unique, valuable, entertaining, and high-quality material for your audience.

I am seeing a lot of posts lately that talk about how they are not getting approved by Adsense. This might be the reason.

I don't think ezoic requires AdSense approval. You will just need their approval and the ad manager.
