I've been building a website with my mom, and she's the author of all the posts while I do everything else. The site is already hitting 1k unique visitors per day and I want to apply for Google Adsense this week.

My question is - is there any issue that I'll be applying from my Google Account, while the visible author of all posts and the website itself has a different name? Or it doesn't matter at all when it comes to chances of approval?

Anything in particular you'd suggest to focus on?

I'm a bit confused regarding the privacy policy / cookie policy requirements, with different articles saying conflicting stuff.

Nothing explicitly mentioned by them, but it's better to have some basic pages like About Us, Contact and T&C /Privacy Policy.
You can try applying without making any changes and request a re-check if it fails (after you have made the necessary changes).

if your site is a blogging site then you must have Policy & privacy page on your site. your site shouldn't have any advertisment banner on the site. your domain should be atleast 6 month old..
 
No problem with author name difference, if your traffic is already 1k per day then you should get approved very quickly, make sure there is privacy, contact, disclaimer on the blog and added in main menu, also try have at least 3 categories links in main menu, and for some reason if your site does not gets approved on 1st attempt, then add long articles on homepage, it will definitely get approved.

What kind of disclaimer should be used on blog? I only use privacy policy, that might be the reason why my blogs get approved after long time

However disclaimer is not that important, privacy does the job, your website rating according to Google search is important for adsense approval, adsense has linked to this rating, the highest ranking sites are one's that show on 1st spot + featured snippets.
and beyond that less ratings, which means low indexing, late indexing like it will take few days. No keyword on first 3 spot, etc, adsense keeps giving same B.S reason "low value content" but it's actually the website rating according to Google search.
I had one expired domain in health which has insane rating, indexing within hours, and many keywords on #1 + many featured snippets.
It got approved within 24 hours on adsense, while most of my sites take around 3 days to 2 weeks.

AdSense requires that you have ownership or permission to monetize the content on your sites, since your mother is the author of all posts, she should be the one applying for the AdSense account or grant you permission to monetize her content.

wow, thank you for the insight, that makes sense! I have bunch of sites with good traffic from bing and other search engines but not as much from google and they are not getting approved due to low value content.
