I have a couple of domains on godaddy, and I want it so that when they get clicked they will open websites on another server. Is this process called add-on domains or Parked domains. You see I'm building sub domains on another IP provider and I want to use the domains registered with godaddy to point at those sub domains.

Parked Domains allow you to point another domain name at an existing site so that both domains open the same website.
Addon Domains are additional accounts all running within one main hosting package so that you only need one main account, but can create addon accounts that will all use separate domain names for each individual site, and will all have their own file structure.
Usually by creating a folder of their own inside the main account and running from there.

You want to set the nameservers of each domain you have in godaddy to your web server. Then you can create sub-domain from those domains. If you have one domain where you want create the sub-domains on and you just want an easy to type in domain name then use forwarding in godaddy, you can do forwarding with masking which will show the domain name typed in instead of the sub-domain.
Domain parking is just letting another company put ads on your domain when a user visits it then you make $$ from the ads clicked.
Add-on domains is what you would use on your web server to tell it what domain points to what folder and you would put your website in that folder. You'd use this after you set the nameservers within go daddy to point to your web server.
